The work of a Demi Chef de Partie is successfully executed when:

Dishes are prepared and presented according to established recipes.

Health and hygiene standards (HACCP) are complied with.

Energy and material saving policies are followed and waste generated is recycled.

Good communication is maintained with all colleagues in the team and other departments on matters that may affect the hotel's operations and the well-being of guests.

The usual responsibilities of the position include: organizing the operations of the section and preparing and serving dishes while supervising the kitchen brigade. Preparing in advance the materials and equipment needed for preparing the dishes. Directing the kitchen brigade, including cooks and kitchen assistants. Cleaning and restocking the work area. Training, advising, and disciplining staff who violate hotel policies and department procedures, providing constructive feedback to improve performance. Recycling whenever possible and applying saving measures. Communicating to the supervisor any difficulties, guest comments, or internal guest comments, and any other relevant information. Ensuring the quality and consistency of the food.

The work of a Demi Chef de Partie is successfully executed when:

El trabajo de Demi Chef de Partie se ejecuta satisfactoriamente cuando:

Los platos se elaboran y presentan de acuerdo con las recetas establecidas.

Se cumple con las normas de salud e higiene (APPCC).

Se siguen las políticas de ahorro de energía y material y se reciclan los residuos generados.

Se mantiene una buena comunicación con todos los compañeros del propio equipo y de otros departamentos en cuanto a los asuntos que puedan afectar de algún modo a la operativa del hotel y el bienestar de los clientes.

Las responsabilidades habituales del puesto incluyen: organizar las operaciones de la partida y preparar y servir los platos supervisando al mismo tiempo a la brigada de cocina. Preparar con antelación el material y el equipo necesarios para la elaboración de los platos. Dirigir a la brigada de cocina, incluyendo a los cocineros y ayudantes de cocina. Limpiar y reponer su área de trabajo. Entrenar, aconsejar y disciplinar al personal que infrinja las políticas del hotel y los procedimientos del departamento, proporcionando comentarios constructivos para mejorar el rendimiento. Reciclar siempre que sea posible y aplicar medidas de ahorro. Comunicar a su superior cualquier dificultad, comentario de los huéspedes o de los clientes internos y otra información relevante. Garantizar la calidad y la consistencia de la comida.
