Operations Manager Fast Casual

Key role leading operations and the HR function in Spain for a fast casual brand in expansion, with full responsibility for locations and people. Will be a key player in the launch and scaling of the business in the Spanish market.

Reporting to General Management and Restaurant Management, the candidate will be responsible for:

• Leading the operation of dark kitchens and restaurants in Spain, ensuring quality, service, and experience standards
• Comprehensively managing the HR function: recruitment, training, development, and team management
• Implementing operational processes, manuals, and management routines from scratch
• Monitoring key KPIs: sales, food cost, times, NPS, profitability, and work environment
• Leading the opening of new locations and ensuring their proper execution
• Coordinating with central teams (finance, marketing, technology, and product)
• Managing supply and ensuring operational continuity
• Acting as the point of contact with regulatory and institutional bodies

We are looking for a profile with 7 years of experience in organized restaurant or fast food operations, ideally in international companies or those with high operational standards. Cross-functional experience beyond operations (HR, training, supply chain, etc.) will be key, as will a proven ability to build teams from scratch in dynamic or launch environments.
The ideal candidate stands out for their practical mindset, high energy, results orientation, and passion for operational excellence and customer experience.
The ability to adapt to unstructured environments and independently lead high-impact projects will be especially valued.

Reportando a Dirección General y Dirección de Restaurantes, el/la candidato/a se responsabilizará de:

• Liderar la operación de dark kitchens y restaurantes en España, asegurando estándares de calidad, servicio y experiencia
• Gestionar integralmente la función de RRHH: reclutamiento, formación, desarrollo y gestión de equipos
• Implementar procesos operativos, manuales y rutinas de gestión desde cero
• Supervisar KPIs clave: ventas, food cost, tiempos, NPS, rentabilidad y clima laboral
• Liderar aperturas de nuevos locales y asegurar su correcta ejecución
• Coordinar con equipos centrales (finanzas, marketing, tecnología y producto)
• Gestionar abastecimiento y garantizar la continuidad operativa
• Actuar como interlocutor ante organismos regulatorios e institucionales

Buscamos un perfil con 7-10 años de experiencia en restauración organizada o fast food, idealmente en compañías internacionales o de alto estándar operativo. Será clave contar con experiencia transversal más allá de operaciones (RRHH, formación, supply chain, etc.), así como capacidad demostrada para construir equipos desde cero en entornos dinámicos o de lanzamiento.
El/la candidato/a ideal destaca por su mentalidad práctica, energía alta, orientación a resultados y pasión por la excelencia operativa y la experiencia cliente.
Se valorará especialmente la capacidad de adaptarse a entornos poco estructurados y liderar con autonomía proyectos de alto impacto.
