What you'll do
Your purpose will be to develop, optimize, and control the technological processes for producing cured ham, ensuring the quality, food safety, and competitiveness of the product.
- Design, execute, and evaluate R&D trials related to ham curing.
- Optimize salting, post-salting, drying, and ripening parameters.
- Analyze physicochemical and microbiological data.
- Develop new formulations or products.
- Coordinate pilot tests and industrial scale-up.
- Validate and document processes according to regulations (HACCP, IFS, BRC).
- Collaborate with Quality, Production, and Maintenance departments.
