The role

What you'll do

Supervise all stages of service: mise en place, production, plating, and timing.
Ensure the quality and consistency of dishes.
Ensure compliance with recipes, technical sheets, and established standards.
Coordinate communication with the front-of-house team during service.
Manage operational issues and ensure smooth service flow.
Oversee the condition and maintenance of facilities and equipment.
Comply with and enforce food hygiene and safety regulations (HACCP).
Lead, motivate, and develop the kitchen team.
Organize shifts, schedules, vacations, and days off.
Identify training needs and implement training plans.
Oversee the onboarding of new team members.
Foster a professional, collaborative, and demanding work environment.
Control uniform standards, image, and team discipline.
Manage the kitchen budget.
Control raw material costs (food cost) and variances.
Supervise orders, suppliers, and stock levels.
Conduct periodic inventories and results analysis.
Control labor costs according to established targets.
Propose actions to improve the profitability of the department.
