You will be responsible for executing with precision and consistency the preparations assigned to your station. Your work is the direct translation of the menu to the plate: technique, accuracy, respect for the product, and the ability to maintain the standard throughout the entire service.

Your day-to-day will start to sound like this…

  • Ensuring the achievement of the established departmental goals, as well as compliance with critical processes and area operations, in accordance with the hotel's standards.
  • Prepare the dishes on the Nikkei menu following the technical sheets and established presentation standards.
  • Manage your station autonomously: mise en place, production, service, and closing.
  • Carry out daily production according to the supervisor's instructions, respecting established times and quantities.
  • Control waste and the proper use of ingredients at your station, reporting any issues to the person in charge.
  • Participate in the monthly kitchen inventory when requested by the person in charge.
  • Execute the opening and closing checklists for your area.
  • Planning preparations in advance to be carried out, in order to provide the best possible service.
  • Assign, organize, and direct the tasks to be carried out by the Kitchen Assistants when the Head Chef so requires.
  • Clean, tidy, and organize the area where you are carrying out your work once the service has ended.
  • Ensuring the proper use of kitchen equipment, checking and controlling that no issues arise and reporting them if they do.
  • Collaborate with the Station Head in preparing the necessary orders for each station, as well as supporting them in carrying out the monthly inventory.
