🎓 Intermediate/Advanced Degree in Cooking and Gastronomy and/or similar. Food Handler's License.

💼Minimum of 2 to 5 years of experience in the role in high-end dining environments or with Michelin distinction. Knowledge of Nikkei cuisine, Peruvian techniques, Japanese cutting, and preparation of Sushi, Sashimi, and Nigiri. Knowledge of fish, seafood, handling, preservation, and traceability.

🗣💬English: valued. Other languages are a plus.

🔔We are looking for an Itamae, who will be responsible for preparing every item on the menu with precise technique, product in perfect condition, and consistent presentation at every service. You will work under the supervision of the manager, and your station will be your area of responsibility throughout the entire shift.

You will work at Fuerte Group Hotels, a great family of first-class professionals with nearly 7 decades in the hotel sector that has grown through differentiated brands, especially in southern Spain.

• Ensuring the achievement of the established departmental goals, as well as compliance with critical processes and area operations, in accordance with the hotel's standards.
• Prepare all the items on the sushi menu following the technical specifications and project standards.
• Master the Japanese cuisine cutting techniques for each type of fish and seafood
• Manage the mise en place of your station independently: cuts, rice, accompaniments, sauces, and presentation.
• Verifying the quality of the product used to prepare the dishes.
• Serve customers at the counter with a natural manner, product knowledge, and professional presence.
• Carry out the opening and closing checklists for your station.
• Collaborate with the rest of the Itamae team during peak demand times, supporting other stations when necessary.
• Place and organize food in the cold storage units and clean them to ensure proper hygiene and product preservation conditions.
• Collect, tidy, and clean the point of sale where you are carrying out your work, once the service has ended.
• Ensuring the proper use of kitchen equipment, checking and controlling that no issues arise and reporting them if they do.
